Hi Steven,
You will of course want to keep it fun for the children while also improving their technique. I've attached a good drill that you could use that would be fun for the children, and a good thing to do would be to point out ways they can improve their technique during the drill.

DESCRIPTION
SET-UP:On the practice area, mark out a 'fairway' using cones. Set up a hitting area behind the 'fairway'.ACTIVITY:In turn team members try to hit their ball from the hitting area onto the fairway. Winner is the team with the most balls on the fairway.

Remember to be patient with your players, particularly if they are new to golf. You will be there to guide them and make them better players, so take your time, even if their technique isn't working

Hi Steven,
It is important to be confident with your knowledge on the basics in golf. Having a good understanding of set-up, grip and swing paths as its usually the basics that can cause issues when playing. Being patient with players to guide them accordingly, whilst also keeping lessons exciting and fun!
