Assuming you are talking about bowling and not the hight of the bowler! I always set a target of the ball hitting the top of off stump at the top of it's bounce. Putting a target on the pitch can help. The more complete answer has to take into account the pitch, the hight/style of the bowler and the batsman. For example if you are coaching outswing the perfect length would be to get the batsman forward driving the ball.
