Is there any kind of offside in the open play? Like, after a ruck or maul being cleared? Or like my defense being broken so I can't intercept a pass from the offense when I'm chasing him?

The simple answer is no! If there is no ruck or maul then there is no offside.
If there is a ruck or maul then the offside line is the rear foot of the maul or ruck.
If, in open play, you are in front of an attacking player you can intercept the pass.

what if you are behind player chasing him and he passes ball to another player but you cut between and intercept him from behind and you turn around and run to your try line.
Mark, that situation would not constitute offside, as Simon said in his answer - no ruck or maull = no offside.
